Our grove sits on clay and silt that holds the water well — what the old men of the village call good ground for an olive tree. The trees stand eighteen metres apart, not for the look of it, but because that is what gives each of them enough light to ripen properly. They were planted by Malek’s great-grandfather: four generations have pruned them since.

Our olive trees receive no chemical treatment. This is not a label we display — it is a way of working handed down through four generations, and it simply asks for more attention and more patience.

The same day, no heat, no additives.

Picked by hand so the fruit is never bruised; pressed the same day so the olive has no time to oxidise; no heat and no additives during extraction. Slower work — but it is what keeps the taste and the nutrients intact in every drop.

One season, a few weeks, to gather a year of richness.

Picking starts in early November: the olives are gathered by hand and cold pressed within hours. The year’s oil comes in a pouch, a bottle or a Bag-in-Box — order it once, or by subscription.
